Provider Details: Bob Wilden's Spring Hill lamb

Spring Hill lambs and mutton are shepherded by Bob Wilden at Capel St Mary and Gt Wenham. They are born naturally from a flock of Texel crossed Dorset and Lleyn ewes that are divided into three lambing groups that lamb in November, February and April.

The sheep lead a very natural life grazing in meadows at Spring Hill Farm and no antibiotics, hormones or toxic chemicals are used in their production. By staggering the lambing dates, Bob can supply us with succulent lambs for 52 weeks of the Year. Apart from the occasional stock ram the flock is totally self-contained and that helps us to achieve a high health profile. We hang the lambs for a minimum of seven day to ensure the best possible eating experience.

Extra special mutton
Bob has a flock of pedigree Portland Sheep, which he rears specially for mutton. They spend their life on lush meadows which form part of a stewardship scheme. The land is free from all fertilisers and pesticides, allowing a wide range of wild herbs and grasses to grow. This diet gives Bob’s mutton a unique flavour.
